Our host Mike Gulotty, General Manager of the Waterford Hotel & Conference Center, is planning an exceptional evening for us!

Formal Attire

Cocktail Reception - Fresco     7:00PM - 8:00PM

Open Bar Hors D'Oeurves - Assorted hot and cold including California rolls, bruschetta, smoked salmon and prosciutto with goat cheese canapés etc.

Dinner - Ballroom                     8:00PM - 10:00PM

Menu 1st Course- mixed greens salad tossed with balsamic Vidalia onion dressing, topped with seared herbed tuna, grilled shrimp, plate decorated with pineapple wasabi

2nd Course - Choice of one of the following:

Breast of chicken, marinated with a special mustard & olive oil marinade, grilled, and topped with tomato relish and Dijon balsamic. Served with chefs long grain rice and assorted vegetables.

Rack of New Zealand Lamb chops, marinated in papaya and teriyaki, served with turnip-sage pancakes, assorted vegetables and mint demi-glace.

Twin tournedos of tenderloin, both seared with fresh rosemary, thyme and olive oil, one topped with tomato relish, the other with cabernet mushroom caps, with Gulotty's béarnaise sauce on the side. Served with turnip-sage pancakes and assorted vegetables.

Dessert: Plates of mini desserts and fruits served Skal style at each table.

After Dinner Cordials will be available in Fresco.
